recipes i've tried: chicken chowder

with 2012 kicking off amazingly thus far, i thought i'd add a new segment to my blog titled: recipes i've tried. in an effort to promote healthier eating around here, the hubs and i agreed that making home cooked meals is the key to success. 

the first thing you'll need to have in order to make this recipe
is a slow cooker (which in my opinion should be a staple
in your kitchen when you have a family 
and no time)




Chicken (or Turkey) Chowder

4 slices turkey bacon, crisp cooked and chopped
1lb turkey breast cutlets, diced into 1/2" pieces
(i used chicken)
1 baking potato, peeled and diced
2 carrots, diced
1 onion, chopped
1 celery stalk, diced (i omitted cuz i detest it!)
2 (10oz) cans low fat condensed cream
of mushroom soup
2 cups reduced sodium chicken broth
1/2 tsp dried thyme
1/2 tsp dried sage

combine all ingredients into slow cooker, cover and cook until soup
is thickened and turkey (or chicken) and veggies are tender:
4-5 hours on high or 8-10 hours on low

the house smells absolutely delicious and i've been taking spoonfuls to "test" out
the seasoning and so far its great! if i'm going to be home most of the day i will
set it on high and stir occasionally, otherwise if i'm out of the
house at the crack of dawn, i'll keep it at the low setting.
